After several frosts the leaves drop, the sugars soar, and new complex flavors emerge.
Within twenty-four hours of the first hard freeze, the berries are hand picked and chilled to 33°F. (Note: the berries above look wet, but this is really a crystalline sugar coating). __________________________________________________________
We are known as the source for the best tasting, sweetest berries on the fresh fruit market. Wine is the next logical step in the progression of uses for this exceptional berrie. Winemakers....late harvest desert wines are currently in demand, and command top dollar in today's market. With a great berrie, and a creative vintner, a unique, niche wine is waiting to be discovered. Two hardy kiwi varieties are available: Passion Poppers – super sweet kiwi, cotton candy, melon ball with a superb finish. Brix = 28 to 32 and beyond. (Note: last year’s crop surpassed the highest reading on our refractometer of 32) Aloha Annas – super sweet kiwi, pineapple and a hint of mint. Brix = 26 to 28.
